I'm making a lo mein recipe but don't have fresh chinese noodles. I do have something called 'Chinese rice noodles by Thai Kitchens but they're dry. Is this similar? I was going to just use fettucine or linguine noodles but they're dry also.
Anyway know how much dried pasta I would use if the recipe calls for 9 oz of fresh chinese noodles? Thanks.

For lo mein I'd use the fettucine or linquine. I'd cook as much as you need for the amount of sauce you are making. It isn't a very critical measure. Dry pasta "doubles" when cooked if that will help, so maybe about 4-6 oz. of dry?
