Does anyone know the difference between a dried powdered herb vs a dried flakes herb, eg rosemary powder vs rosemary leaves.

To the best of my knowledge, the powdered is just the leaves that has been rubbed to a fine powder. I do it in my hand sometimes with sage. I don't really like to use powdered herbs usually.

Thanks for your comment. I always use the flakes but my daughter claims that the powdered is milder. I will experiment.

It would lose its strength pretty quickly, I'd think, so it needs to be very fresh--actually doing it yourself with a mortar and pestle or a grinder. I think the leaves are easier to control amounts also, and distribute the flavor.
