chipotle marinade

Just tried this one out of "Mexican Everyday" by Rick Bayless. Really easy and tasty!

I used an adobo style chipotle pepper from a can (see related thread for what to do with the rest of the can) and chopped and seeded it. The recipe called for two chiles, but I wanted to ease into it. Put in 3Tbsp balsamic vinegar (apparently cider vinegar will work too, but balsamic was what I had), added chopped onion, oregano and salt. Mixed it with leftover pork tenderloin. I was hungry, so I didn't even refrigerate it to let the flavors meld, though I'm sure time would improve it even more. It made a very tasty taco with some steamed potatoes, avocado and lettuce. You could use leftover chicken if you wanted, too.

I made dinner without using a single pot or pan!
