"Cheater" caramel sauce

If anyone needs a quick caramel-type sauce. . .


The sticky buns sauce from Joy of Cooking makes a wonderful quick and easy one.  I used it along with Moomie's buns recipe last week to make sticky buns, and everyone looooved the caramelly sauce.  One girl even took the platter to her cube so she could scrape off the remaining sauce and eat it!


I ended up making a couple of batches last night and putting them in 4 and 8 oz canning jars for quick office gifts.  It would be great as a topping for ice cream, dipping sauce for apples, etc., and it goes together VERY quickly.


Here's the recipe (from memory):


1 cup packed dark brown sugar
1/4 cup honey
1 stick butter
3/4 cup chopped pecans


Bring the sugar, honey and butter to a boil, stirring to dissolve the sugar.  Remove from heat and add the nuts.


Now, for the sticky buns, you pour it out into a baking pan and put the rolls on top before baking, so for a topping, I cooked the sauce a little longer--until about soft ball stage.  I didn't check the temp, so that's a guess.  I also added more nuts--about a cup per batch.


The honey and dark brown sugar give it a wonderful flavor I find addictive.

Interesting.  This is a hamburger buns recipe and yet, it works for sticky buns.  I guess a raised dough is a raised dough.

Yep. FWIW, I found it too sweet for my tastes as a plain dinner roll... it'd be great for sweet rolls. :-)

i've used it as a dinner roll recipe, but as an easy yeast roll, I am not surprised that it works for sticky buns.

Yep, in addition to the recipe being sweet, it's also quick for a yeast bread, so it worked out well with my schedule (make them the night before a work holiday food fest).  It's also such a forgiving dough I figured it would adapt well to being rolled out, and it did.


I'll use it again for sweet rolls for the same reasons.

What dough would you recommend to use for sweet/sticky/cinnamon buns?

That's such a no-fail recipe, I'm going to have to try it for sticky-buns too. A nice sweet dough  which would be perfect-- good thinking!  I sub a cup of ww for bread flour to make perfect loaves for DH's breakfast toast.  In fact, I should start one soon.
