"Bittersweet" Saucepan Fudge Drops

Made these last night for our intern's last day of work today and they're a winner.  I used Ghiradelli cocoa.  They are incredibly easy and quick to mix up and yield a thin fudgey-crunchy cookie that feels a bit like a brownie as you bite into it.  The top gets dry and crackly while the inside stays gooey and fudgey.  A definite keeper!

Uhm, recipe please?  Although, I think I'm going to have to put this book on my Christmas Wish List.  It's supposed to be rainy on Sunday so perhaps I will have time to make these.

I'll post from memory and ask Biscuit (or someone else who has the book) to backstop me....... we're leaving for the shore in the morning & I know I won't be able to check my book and get online tonight.


5 Tbs butter
1/2 cup + 1 Tbs cocoa powder (dutched or natural)
2/3 cup sugar
1/3 cup packed light brown sugar
1 cup flour 
1/4 tsp baking soda
1/8 tsp salt
1/3 cup low-fat or non-fat plain yoghurt
1 tsp vanilla
confectioner's sugar for sprinkling


Preheat oven to 350* and line 2-3 baking sheets with parchment.  Combine the flour, baking soda and salt together and mix well with a whisk.  Melt the butter in a medium saucepan.  When it is all melted and sizzling, add the cocoa and mix thoroughly until smooth.  Add the sugars and mix thoroughly -- the mixture will be thick and sandy at this point.  Add the yoghurt and vanilla and mix well.  Add the flour mixture all at once and mix/fold until just combined.  Scoop onto prepared pans using a level Tbs. and sprinkle with confectioners' sugar.  Bake 9-11 minutes until top is cracked, dry and somewhat firm, but middle is still soft.  Cool on wire racks, removing parchment from pans, until the cookies are firm enough to remove from the parchment.

I made these today and they are indeed yummy. Definitely on the A list.

It's 2/3 cup sugar. I doubled the recipe and it turned out well. I probably baked a little long. I was fooled by the "dry "on top bit. Mine were looking a little moist in the cracks so I did them longer. As they cool they really crisp up so to get the fudgey centre I would take them out when the cracks look a little moist. Now I must get back to the Olympics.


Edited to correct the amount of sugar-Ruth was right.Next time I will check the book, not my brain.

OOPS! I goofed. It is 2/3 cup sugar. When I doubled, I doubled the brown but apparently not the white! Still great cookies...Yes, the flour is 1 cup. It's from Bittersweet, Jean.

Yup, it is. Although I doubled it and in error only used a single dose of white sgar and they were still very yummy. They keep fairly well too. We finished the last yesterday. I had intended to freeze some for school lunches, but it never seemed to happen.
