Hi Janet--
I made a few baby artichoke recipes from Issue 104, including that Fritatta with taleggio cheese (really good) and found you do not have to remove any choke from the baby artichokes.

I didn't have a recipe in mind. I was cruising the produce section and bought the artichokes on impulse, but I'm going to try the frittata. Thanks!

Great recipe! The local grocery store did not have taleggio, so I substituted fontina. Nice to have a different vegetable for dinner. Thanks for the link.
