This was the recipe for putting the PR under a terra cotta pot - what a waste of time and money ($10.00 pot in Alaska).  Besides being extremely heavy and taking up almost my entire oven it just didn't produce what I was looking for.   I have an accurate thermometer, and an excellent oven (DCS), purchased a great PR, and have had good results (not great) in the past.  The timing and getting temperature up during the resting period was frustrating.  The technique was just plain cumbersome and a waste of time.  AND, don't try his au jus, it had zero punch/flavor to it  - I'll be making my own for french dips tonight.
