Zucchini Brownies

For those of you who have zucchini growing in their gardens and don't know what do with them.

I made this last week.  A friend of mine passed on the recipe.  They were soooooo good.  Very moist and they were nice and chocolatey.

Zucchini Brownies

1 cup flour
¾ cup whole wheat flour
1/3 cup baking cocoa
½ tsp. Baking soda
½ tsp. Salt
Combine in a large bowl

2-3 cups zucchini (shredded)
Stir in.

1 egg
¾ cup sugar
¾ brown sugar
½ cup plain yogurt
½ cup oil
1 tsp. Vanilla
Combine in separate bowl and beat with fork. Stir into zucchini mixture.
Spread evenly into greased 9 x 13 inch / 3.5 L pan.

1/2 - 1 cup semisweet or mint chocolate chips
½ cup nuts (chopped; optional)
Sprinkle on top of batter. Bake in preheated oven at 350F until toothpick
inserted in center comes out clean, 35-40 minutes
