strawberry cake (post #65264)

in

Just wanted to share my new variation of ice water white cake. I needed a strawberry cake this wknd and couldn't find a recipe to get excited about, so I just dumped two cartons of Brown Cow Greek Strawberry Yogurt (fruit on the bottom) in with the wet ingredients and 1 tsp of red food coloring. It was delicious. I could not believe how "strawberry-y" it tasted. Did not affect the texture at all.

The cake is beautiful, and it's nice that your creativity resulted in a delicious cake. What kind of icing did you use? You decorated the cake so nicely.

just a plain vanilla buttercream. i like this one http://www.wilton.com/recipe/Extra-Special-Buttercream-Icing-1 but i sub butter for shortening and cut back on the sugar.

I haven't seen whipping cream added to a confectioner's sugar buttercream, but it sounds delicious. All that shortening in the original recipe is just awful -- butter is the way to go. :)

it's really good. It's not quite as crustable as a shortening/sugar combo but it's edible so that's the most important! thanks for your sweet comments.

Also... meant to say cups of yogurt, not cartons.

That looks so good that I've put it up as my desktop wallpaper for the day.  Hope I don't absorb too many calories.  *L*

Good to know. I just converted the recipe to gluten free, so I need to bake it to see if what I've converted works.

What a great idea!  I'll keep that in mind next time I need a flavored cake.  Tell me, did you adjust the wet ingredients at all, or just make the addition with no other alterations?

I did not adjust the wet ingredients (though it was a scant 1.5 cups of ice water). It did make more batter--I had enough for two eight inch thick layers and 10 cupcakes.

I imagine lemon would work great too!
