this was very good, I ended up adding more flour to the dough, and in retrospect, I should have refrained from it, because my bread had less "holes" than a real ciabatta should have. But, overall it was great, excellent sourdough taste, not too strong but definitely there

I used the King Arthur sourdough starter, converted to 100% hydration for a couple of days
