Snack Cakes from Holiday Baking Issue 68

I've been on a kick to use up those odd bits of ingredients that have been hanging around my pantry. Plus I've been craving sweets! So, I've tried two of the snack cakes from Nicole Rees's article in last year's Holiday Baking issue.

The cocoa snack cake was delicious, moist, and chocolatey, as advertised. I didn't have any coffee, plus Clara (baby) didn't need any second-hand caffeine anyway. So I substituted buttermilk for the coffee, figuring that the large amount of baking soda could handle a little extra acid. All that acid made for a very bubbly batter, but was adequately neutralized.

The brown butter banana snack cake is in the oven and smells delicious too. Chocolate chips never last long in my pantry, but I had some Heath Toffee Chips to use up. Of course, they had metamorphed (and I mean this in the geological sense, not the biological sense) into a brick of brickle so I had to chop them. If the batter is any indication, it will be very tasty, although it's not as easy as the cocoa cake.

I also have some cranberries lurking in the freezer, so the cranberry upside down cake may be next!

You have been busy!  I too have cranberries I ought to use.  I'll wait for your review before pulling the issue to put on the table.
