Remembering your comment in the shortbread thread from a few weeks ago, I wanted to tell you that I made shortbread today that is as close to Walker's as you can get.


1 cup AP flour
1/4 cup rice flour
1/4 cup superfine sugar
1/4 tsp salt
1/2 cup cold unsalted butter, cut into chunks


Whiz the dry ingredients in the FP til combined, then add the butter and whiz til it looks like coarse meal with no chunks of butter left.  Take a piece of parchment, put it over the base of a 9" springform pan, then fit the side of the pan over the parchment and close it.  Dump in the dough (which is really crumbs) and tamp down well.  Open the side of the springform, and slide the parchment with the shortbread round on it onto a cookie sheet.  Prick with a fork and mark into petticoat tails with a knife.  Bake in a 300° oven for an hour, or until pale gold.  Cool on a rack, scattering some granulated sugar over it if you wish.  Cut along the scored lines into pieces.


I think it's the combo of rice flour and not working it into a real dough that makes it so crisp.
