Sandwich Rye Bread (post #65248)

in

I think this will be my default rye from now on. Smells wonderful and has a great oven spring. Can't wait to taste it. About ready to take it out of the oven.

Sandwich Rye Bread from KA Baking Sheet

1 1/4 cups water
2 T dill pickle juice
2 T butter or oil
3 cups AP flour
1 cup Rye flour
2 T potato flour
2 T molasses
2 T dried minced onions
1 T caraway seeds
2 tsp salt
2 tsp instant yeast

Place in bread machine and set on dough setting.
Form into loaf when through and place in bread pan for the second rise.

When about an inch over the top of the pan, bake at 350° for 35 minutes. Internal temp 190°

Did you start in the machine? I can leaveout the seeds.

Yes, my machine kneads all my dough for me.

A tad bit warm yet, but I sliced a little off the end. It's a light colord rye, but I like the crumb. Maybe I'll go a little lighter on the onion next time, but it's a winner. Great for sandwiches.

Try it and see what you think. Too bad you don't like the seeds though. I love them.

It's DH that doesn't. I don't mind them. AND  truth be told, rye bread is a pretty newcomer to the South, I think!!  I, of course, have always eaten it.
We did love that pumpernickel recipe I posted a while back. I haven't made bread in ages. Need to put it on the list.

Oh, yes that pumpernickel is excellent. I must make that again soon.
