Pudding cakes? (post #63460)


I made the mocha pudding cakes from this month's issue. The top was spongy and the middle was pudding like, however the bottom was a light color(yellow?) and had no chocolate in it at all. What happened???

The Mocha Pudding Cakes are in issue 70, the one with the great roasted veggies.  Did you do the one-third of the egg whites into the yolk mixture or do it all at the same time?   I really don't know, the cocoa is added to the melted butter and egg yolks.  Perhaps its the mixing?  Not enough? 

But, but, it's SUPPOSED to taste like that!

I did mix the 1/3 egg whites in first, then fold/stirred the remainder. Although I did have trouble getting the remainder incorporated without stirring too much. It was weird, it totally separated with no chocolate at all in the bottom. I read that can happen if you don't use a water bath, but I did use one so I'm not sure what happened. They were so good, minus the weird bottom, that I want to make them again but don't want to ruin a second batch.
