Molten Baby Cakes question

I will be making the molten chocolate cakes from Nigella's book again tonight


We will be four - the recipe makes six little cakes. What should I do with the extra two? Bake longer and transform them into "regular cakes"? Does that work ok?

I had one left over on Easter and DH put it in the freezer. The next day I tried to reheat it in the microwave and it did bake the center, so I think your idea would work OK. It still tasted great. You'd hate to waste all that good chocolate!

Just leave a lot of batter in the bowl to be licked out. Problem solved :)

Although I havent made these particular Molten cakes before..the ones I have made and left over I put in the refrig..nxt day they were fudgy..and delicious.

Although I haven't used this recipe, one of the FC recipes calls for refrigerating the batter and baking it later.  I saved the extra batter and baked some the next day.  It worked perfectly well.

Well, doh, why not? I made up the batter the day before and refrigerated the cakes until baking. I doubt another day would have hurt.  Good thinking FI.
