Thought I'd share a simple but delicious recipe for a Cranberry Bundt Cake.  It is so good and stays moist for days.  Perfect for drop-in guests or to add to the dessert table for those who don't like their desserts too sweet!


Linda Evan's Cranberry Coffee Cake


1-8oz. cream cheese


1 cup unsalted butter


1 1/2 cups sugar


a 1/2 teasp. vanilla extract


4 eggs


2 1/4 cups all purpose flour, divided


1 1/2 teasp. aluminum-free baking powder


1/2 teasp. salt


2 cups fresh cranberries, coarsely chopped


1 /2 - 1 cups coarsely chopped walnuts or pecans


*Chiqui Note:  There are no spices in this cake recipe but I like to add a little cinnamon and a bit of fresh nutmeg.  It is wonderfu, however, just as it is.


 


Cream cheese, butter, sugar and vanilla until light and fluffy (aprox. 4 minutes).  Add eggs, one at a time, beating well after each addition.  Combine 2 cups of flour and all the other dry ingredients and mix well.  Gradually add dry ingredients to butter mixture.  Mix remaining flour with the cranberries and nuts.    Fold into butter mixture.


Batter will be very thick.  Spoon batter into a well buttered tube or bundt pan.  Bake in a 350* pre-heated oven for 65-70 minutes.  Let stand in pan 5 minutes.  Invert onto a wire rack and cool completely.  Place on a serving platter and dust with confectioner's sugar.  16 servings.
