Miss Fiona wants an ice cream cake. White on white on white.  To say I'm a tad unhappy is an understatement.  :( 


I have looked in Rose's baking books and a couple of decorating books I have and am stumped as to what frosting to use for this.  Most are just pouring chocolate over the top.  I understand the basics- cut the cake in uneven pieces, less on the bottom.  Soften ice cream.


So, I'm figuring I'll crumb coat the two halves seperately, freeze.  Soften the ice cream, put it on top of the bottom layer, freeze.  I'll want to do the ring of frosting to hold the ice cream in and also crumb coat the top and bottom layers to discourage the ice cream from melting into the cake.  But maybe I want that?  Where would it melt to? 


I'll set a timer for 10 minutes.  Complete the frosting, freeze.  Set the timer. Take out and do the edges, freeze.  Set the timer, put the flowers I'll be starting this weekend on. Freeze. 


I need to know what frosting to use.  What a pita.

I'm thinking they are thinking they are going to get a cake like the ones I did in class, there have been hints about the 'basket' cake.   But it won't be able to happen if it's ice cream, which is what Fiona wants so it's what Fiona is going to get.


Whipped cream it will be!  How easy is that?  I won't even do borders.  I can do lots of little daisy's and have them 'folded' so they will sit on the bottom and lean on the cake.  Can do pansy's or something for ringing the top and roses for the actual top.  I can do little balls to put on the sides.  Whatever decorations I end up doing, they will be colorful to contrast the white cake, white ice cream and white whipped cream.


Of course, I can also do chocolate sauce.

Adele I have made this cake from Epicurious.com. You wouldn't be making chocolate cake I know but might be helpful just for procedure.

Don't use any kind of buttercream, american or european... frozen butter is nasty. And impossible to cut through!


I'd probably just use sweetened whipped cream, as it thaws quickly enough to soften while the ice cream and cake are still frozen... if you soften the whole thing in the fridge for 30 minutes to an hour before serving it should be good.

I agree with Tracy about the whipped cream for a topping, because I remember an ice cream cake recipe from old cookbook which suggested the same thing.
