...do you start holiday baking? And how do you store things? I'm mainly talking about cookies....

I've already started.  This is the time of year I'm busily making cookie dough and pie dough and cheesecakes and freezing them.

Do you actually bake anything yet? Or just freeze it all?

I make the doughs and freeze them - cookies in logs (except for dough I intend to roll out and cut - that's frozen in flattened rounds), and pie dough in flattened rounds.  Double wrap in plastic, then into labeled plastic zip-locks.  Cheesecakes are actually baked, fully cooled, and double wrapped, labeled, etc.


Now - for cakes I know I want to bake, I do things like make "mixes".  I'll measure all the dry ingredients into zip-locks and label them, including where the recipe is so I can find it quickly.  These I store in my pantry.  I've also started mixing my mulling spices and hot cocoa mix.  Making herb butters (those are formed into logs and frozen, too).  I try to anticipate the things I'm going to be doing and do what I can in advance.


I always make more cookie dough and cheesecakes than I think I'll need, and then I give the frozen logs as gifts to my neighbors.  They love getting frozen, slice-n-bake cookie dough.

I completely agree. I need to clear out my spare fridge freezer before I can even start holiday baking. The only time I ever managed to start in November was almost 10 years ago. Since then, it's been a mad rush the week before Christmas.

Very impressive.  And this is exactly why I need a freezer in the garage.  I have to put that on my list for Santa.
