Welcome back from Tracyfest - hope you had fun!


I'm now ready to enter phase I of my "Real" NY Cheesecake test. I want to do the same thing you did, and that is to do two cakes, halved in one pan. I'm going to use my tweaked recipe from Gourmet and bake it much longer, somewhat beyond the point at which the center sets. One half will be as written, and the other half will have more flour and either one  whole egg (or two) or two whites instead of the two yolks.


My question is, how did you create the pan divider?

Aluminum foil. I just folded it to fit across the pan, bent to cover about a half inch of the bottom and sides on one side of the divider. Cheesecake batter is thick enough that if you pour it carefully the divider will stay in place, and the batters won't mix during baking.

That's so sweet of you, CM. Thanks for thinking of me. I hope I'll be able to make it to some of the fests in the future - my money situation has been so bad over the past several years that I've got to get it together before I can travel anywhere. My next move is to get out of FL by next spring! Yay!

...but, Meryl...if you move out before spring, you'll miss hurricane season!
