Hello. I'm looking to make this carrot cake but don't have a 9x13 pan. I'm wondering if this would work using 2 9" round pans or cupcakes? And are there any pro's out there that might be able to tell me how to alter baking time?

Two 9-inch pans have the same volume as a 9x13 pan, assuming the height is the same. I am not a pro, but I think your rounds will be done in about 25-35 minutes.
