My daughter has recently expressed an interest in blueberry muffins.  I tried the recipe from Baking with Julia and it was an awful flop.  I have some very nice frozen berries, but the recipe called for fresh, and a lot of berries too-- so the muffins became like blueberry glop.  Does anyone have a plain, simple blueberry muffin recipe that works well with frozen berries?  I did try Ellie Krieger's Good-For-You muffins back in the Days of the Challenge, but she didn't like that-- I think I need something simpler.  

I welcome your thoughts!

Hey tetramin--

Maybe pick up an oven thermometer--they are not very expensive.  Could be your oven is running too hot?  Too bad, that cake sounds good!

It would seem to me pretty obvious that your oven is just too hot!!  Get a thermometer, and then get it adjusted.

I like to cook with coconut flour (here are my favourite coconut flour bread and muffins recipes) as it is gluten free and high in fiber, so thats my favourite recipe:

1/2 cup honey
3 tablespoons frozen blueberries
5 eggs
4 tablespoons coconut oil
1/2 teaspoon baking powder
1/4 teaspoon salt
1/2 cup coconut flour
