Artisan break, crackly crust.

Just want to thank you all for your information about artisan breads. I made a couple of loaves this AM, tasted just great, but I did let them raise too quickly so they fell when I put them in the hot, hot oven. But oh! so good and a marvelous crackly crust and soft inside. A little more tweaking and I think I shall have it down tight!!
