8" Vanilla Layer Cake Question - Scaling

I wanted to make Rose Levy Baranbaum's Yellow Butter Cake, but I only have 8" cake pans.  Can I scale the recipe down to make 2 8" layers instead of 9" layers?  Should I cut the recipe in half?  or scale it down to 3/4?


Recipe


6 large egg yolks


1 cup milk


2 tsp vanilla extract


1 1/2 cups (300 grams) granulated sugar


1 tablespoon plus 1 tsp (20 grams) baking powder


3/4 tsp salt


12 tbsp (170 grams) butter

Disclaimer: I'm no expert, just answering in case you need something quick before someone better than me tells you what to do:) But if it were me, I'd make the full recipe and use the extra to make a couple of cupcakes.

I second Amy's vote. Don't mess with the recipe. Just fill your 8" rounds 2/3 or 3/4 full (whatever you normally do) then pour the rest into cupcakes. It is more trouble than it is worth to adjust a cake recipe.

If you want to scale it down, go to the 3/4 level, as you can easily compute the ratio between the two pans by figuring out the square of the radii, or 16 vs 20.25, which is very close to 3/4.  I think most people are probably correct, though.  You can use the recipe as written and just use the 8" pans.  Otherwise, you might want to mix up all the batter and put some (approximately 1/4) into cupcake pans.

LOL! I love math, but even I know that this is silly when you are trying to figure out baking powder, egg yolks etc. LOL. Come on MM. Could you really "easily compute" this recipe? :)

Of course.  The only problem is the egg yolks, and you could fake that!  Everything else is pretty simple.

Sorry I didn't see this sooner.

Been here, done this, made this very cake in 8 inch pans. 2/3 of the recipe is perfect. And it scales very easy as well.
