Curry Coriander Shorties.
Interesting little shortbread cookies. I think they are lovely, not sure what DH will think of them. Definitely in the let him try before you tell him what is in them category!;)

A busy day of baking. A key lime pie. Then, to use the whites that were left from the yolks in the pie, an italian meringue buttercream, which I put on top of a small batch of cupcakes and sprinkled with chopped up Skor. Finally, Mexican Wedding Cookies. Except that they turned out flat, and I have never seen a flat Mexican Wedding Cookie. Huh.

I finally got my mag today.  They're on the slate for tomorrow.


Here's the abbreviated recipe for those who are interested.

                       Curry Coriander Shorties BA


  2                tsp  coriander seeds toasted med heat -2
                        minutes- grind
  1 1/2            tsp  Madras curry powder toasted - 1 minute
  2             sticks  softened butter
     1/2           cup  sugar
  1                tsp  vanilla
  1                tsp  salt
  1 3/4           cups  AP flour


Blend butter, sugar, salt vanilla with rubber spatula.
Whisk flour with spices.
Combine with spatula and form 1 inch balls.
Place 2 inches apart on ungreased sheet. Press x in each with floured chopstick.
Flattening to 1 1/2" diameter.
Bake at 350°for 20-25 min. Cool 5 minutes then transfer to racks.

Mixed reviews on this one.  The first batch was slightly over baked and my reaction was ugh--too much salt.  I just ate one from the 2nd batch and thought it was pretty good. Further testing will follow. :)

My first batch was slightly overbaked as well. A wee bit salty. Subsequent batch I love.
Then again, I loved the salted white choc. oatmeal cookies. (As did my co-workers who skarfed them down!) :)
Have I mentioned I am more of a savoury type gal? ;)
