Thought I'd share an interesting food find: Tofu Shirataki noodles.

Picked them up at an Asian market this weekend, after tasting them in the store (this market has 8-10 tasting stations set up all around the store.... brilliant, especially when there are so many things that are unfamiliar to non-Asian folks!). The sample was a basic noodle soup with chicken broth and sliced veggies, and the noodles were really good.

They come in a fettucine shape and regular round noodles. I think they'd be great in soup, salads, and stir-fries... but not sure how the texture would hold up in a plain old bowl of spaghetti. I'll try it and report back.

Nutritional info: 1 8-ounce bag = 40 calories, 1g fat, 30mg sodium, 6g carbs, 4g fiber, 0g, sugar, 2g protein.

Wacky. I've never heard of them. But, I'd probably like them, since I tend to like tofu things.

I wish our Asian store had tasting stations. Hm....wonder if they could be talked into it. ;)

I've tried these, Stew Leonard's carries them, (also filled with tasting stations.)
You're right, they work in soups, might be great in an Asian noodle salad, but don't quite do the trick when you really want a bowl of pasta (which unfortunately, I often do.)

Report on the tofu noodles: they make an EXCELLENT "lo mein." I got home very late last night (at work until 6, running errands until 9), so I threw some frozen shrimp stir fry mix (from Trader Joes, 3 points for the entire bag!) into a skillet, then drained, rinsed and dried the tofu noodles (they do have a bit of a strange odor at first).

Dumped the shrimp & veg into a dish, added sesame oil to the pan, and quickly sauteed the noodles till hot. Added a clove of garlic and about 1/4 cup of a bottled peanut stir-fry sauce, returned the shrimp & veg, and tossed together.

Delightful! And EXTREMELY low-cal, low fat, etc. I calculated about 6 points for the entire thing, and it'll feed me twice. :-)

For anyone in the Toronto area, you can find these noodles at Whole Foods.  There's a package in the fridge waiting to be made into Asian-style chicken noodle soup.

Can anyone tell me if they are gluten -free?  No wheat, malt, etc.  I am close enough to Oakville to get some for my two celiacers if they're safe.

Hi Martagon-- I am pretty sure they are gluten-free, they are made of tofu and yam flour... but I'd have to have the package in front of me to be sure. I can check for certain later this evening. :-)

Tracy - thanks for trying the new food and reporting back.  I definitely will keep my eye out for the noodles.  We have an amazing Asian market in Seattle that I'm sure will have it.  What kind of peanut stir-fry sauce do you use?  The recipe sounds very healthy and yummy.

They do indeed... tofu and yam flour. :-)

Martagon, the package says gluten-free, and the only listed ingredients are filtered water, tofu (soybeans, calcium sulfate, glucono delta lactone), yam flour, and calcium hydroxide.
