What to serve with stuffed peppers (post #34779)

I have lots of green peppers from the garden so I am going to make stuffed peppers. Just wondering, What do you serve along with stuffed peppers?

Water is a great ingredient to cook with, it has such a neutral flavor - Bobby Flay

If you're stuffing them with a rice and meat mixture, I'd just serve a simple salad with them.

Oh - sorry! I never stuff them WITH rice - I stuff with a mixture of meats and vegetables, rice on the side. I suppose if you stuff with rice you don't need rice on the side (g)

Rice is already in mine for the stuffing. Along with meat.
Interesting. Haven't made them in a while (and have come to LOVE red peppers instead of green for stuffing) and I think I usually just serve a salad.
When I make it - and that is a very rare event - I only stuff with meat and veggies.
I could eat rice on a daily basis - in fact, back home most people do. It is my default side dish for plenty of stuff
come to think of it, I would not mind rice as a side dish even if my peppers had rice in the stuffing... :-)

I love rice. Got into the habit of eating it when we lived in Panama, and I'm with you, could probably eat it at every meal.

When I was growing up, we did eat rice at almost every meal except for breakfast. It's still one of my all time favorite foods.
This brings up a burning question I've had...is a red pepper a whole different variety of a green one, or just a green one that has ripened? Seems they (the red ones) have a sweeter taste. I know the red peppers are a lot more expensive in the market.
If allowed to stay on the plant, green bell peppers will turn red. One year I purposely left a big one on in hopes of it ripening before frost. Alas, one of our visiting friends proudly presented me with this 'beautiful pepper that you missed'. LOL, Oh, thanks.

But I think some varieties turn red quicker. Not sure, but seems so.
Unless your stuffing is all meat, you can serve your peppers alongside a meat or fish protein.
My mom served stuffed peppers frequently as part of a meal that included all the other components (protein/starch/veggie) so to me, they're an "anything goes" kind of thing.

Yes, I think I'll start thinking about that--more a substantial side dish. Good idea. Can stuff with barley for a real bomb!!
I stuff peppers with meat and rice mixture and usually serve with a green salad.

Like you and Gretchen, mine is meat and rice. It is a nice Jewish recipe, w/ a sweet and sour tomato sauce that includes raisins. (Yes Chiff, it has sugar in it-brown sugar!)
I figure the pepper & the tomato sauce is the vegetable. To me, it seems to work best with a one-thing-on-the-plate presentation.
I'm on the side of the simple green salad folks.

Stuffed bell peppers are one of my favorite comfort foods. I stuff mine with ground beef and/or pork and use soft bread crumbs to bind the meat. I always serve mine with either homemade Mac & Cheese or Garlic Mashed Potatoes!!

If you have lots of green peppers and are looking for a way to use them, try Hubert Keller's recipe. ( He is a fabulous San Francisco (via Brasil) French chef. Although his recipe calls for red and green peppers, I've made it with just green peppers and it is really good.

Thanks, I do have quite a few peppers so I will try that another time. Looks yummy.
I love stuffed peppers, and I find them exceptionally filling--lots of fiber. I usually stuff with a meat and rice mixture, so I don't service rice or other starch on the side. Steamed carrots with a squeeze of lemon or a little lemon butter is my usual side.
